The Alma (green) Blend is part of a partnership between Onyx Coffee (our importer) and Habitats For Humanity Guatemala. It is the culmination of 3 generations of farmers and families producing coffee in the highlands of Huehuetenango. Over the last 20 years the program has grown, partnering with other families, cooperatives, and associations in Guatemala. Their mission, to connect the families and their coffees with roasters around the world. Their sustainable approach finds every coffee a home, creating value for the farmers by selling more of their yield, the higher scoring coffees going to roasters like us, and beans that would not quite up to our standards are sold to local consolidators. For each pound of the Alma Coffee, Onyx Coffee donate $0.05 to Habitat For Humanity's Smokeless Stove Program. Learn more about the partnership in the video below.
This washed process is de-pulped and spends 24 hours fermenting before the remainder of the mucilage is removed. Once fully washed, the coffee is dried on concrete pads for seven to ten days. After drying the coffee is sent through a final dry mill processes to remove the protective parchment layer, and sorted. The farms that contribute are near Laguna de Ayarza a volcanic crater lake creating the nutrient rich soil at high elevation that coffee thrives in. The resulting cup is a delicious, classic, Guatemalan coffee, with hazelnut, chocolate, and the a balance between a sweet and dry finish with lingering peach black tea notes.
